Well, I haven't played jousting against the NPC, so I don't know anything about its AI, but I'll just assume the AI probably uses some variant of a greedy-random algorithm, if it is not completely deterministic. Anyway, my opinion is the same:

Playing against the AI as a filler in the bracket is just stupid. It's making an even bigger farce out of jousting than it already is. If the AI is too predictable, there's really no point to play against it. If the AI is too random, then there is nothing you can do to ensure victory. Moreover, I have never heard of a tournament of any competitive game that fills the brackets with NPCs. Usually, they'd probably just let a few "lucky" folks automatically advance their first round in the brackets by default.

Anyway, it looks like there won't be many participants in this jousting event, so you might as well just change to a round-robin format if that's the case.

If NPC win, the odd man is dropped, the bracket is dropped.
If another bracket becomes odd again, then one of the player will play the NPC again.
Therefore the finals will not have only 1 player.
If an NPC wins the 3rd place, the prize will not been given out.
These stuff is pretty obvious...

Minimum of 8 is registered is plenty. I don't want it to take up the event too long out of everyone's time like the Monopoly.

I don't see any problem with relying on the NPC in the case that we get an odd number of participants. It's just a backup. It'll be a fun event either way. :p
